This avocado coconut curry will work really well for your keto diet

We're no strangers to fad diets. Every day we hear of a new diet that's taking over the world by storm and one such diet that has been making headlines for quite some time is the keto diet. Touted to be one of the best weight-loss diets, the keto diet is mostly known for its quick results. It works on the 'low carbs-high fat' concept which is why people tend to shed those extra kilos really fast. However, it can get tiring to eat the same things every day and this will obviously make you want to cheat on your diet.



That's when this delicious recipe comes in. The avocado coconut curry is a lush and creamy dish that won't just work well for your keto diet but will also give your tastebuds that much-needed twist. Now, you might be thinking to yourself that curry couldn't possibly be good for your keto diet? Well, normally you would be right, but since this one is made of avocados, you have absolutely nothing to worry about.



Avocados have a high-fat content but despite that, they're touted to be one of the best fruits available owing to their nutritious properties. "Avocados contain (PFAs), which are anti-inflammatory. The fats found in avocados are unique that keep a check on inflammation. Avocados are also rich in dietary fibre that keeps the stomach full for a longer time and improve the digestion process."



Apart from helping in weight loss, avocados also have multiple other health benefits. They're rich in omega-3 fatty acids which work wonders for your bones and muscles; they're rich in Vitamin C which can give you clear and radiant skin. They're also high in fibre which helps keep you satiated for longer. Coconut milk is also rich in fats which are easily digested and can help curb cravings. However, make sure that you eat them in moderation so as to not put on weight instead of losing it.



Here's the recipe:



Ingredients needed: 2 Tbsp coconut oil, 2 dried red chillies, 1 tsp methi seeds, 1 tbsp mustard seeds, 1 onion, 4-5 garlic cloves, 1 ginger, 1 green chilli, 2 stems curry leaves, 1 tsp turmeric powder, 1 tsp red chilli powder, 1 tbsp dhaniya powder, 1 tomato, 1 cup coconut milk, 1 tsp rice flour, 1 avocado, 1 tsp tamarind paste.



Process: Heat the oil in a pan and add dry red chillies, methi seeds & mustard seeds. Saute onion, garlic cloves, ginger, green chilli & curry leaves and add turmeric, red chilli, dhaniya powder, tomato & coconut milk. Mix well and add some water to make a good paste. Mix the rice flour with water and add to the paste. Add the tamarind paste and then chop up the avocado and add it to the curry. Voila! Your dish is ready to be served.
